Thanksgiving greetings

Although Thanksgiving is a memory already for our Canadian friends, here in USA, this is the day.

Lots of things to be thankful for: family, friends, the gifts of the earth.

It was 56°F when I went out at 6:30 this morning to sniff around, literally. The sky was just starting to lighten, needed to turn on the porch light to see the thermometer. The air was heavy and damp, patter of raindrops evident … and eau d’skunk!

I went to bed before 8 last night and was sleeping soundly when Bode started barking around midnight. I got up and opened the front door to look out and he started some serious sniffing. Skunk smell! He really wanted to investigate. NO WAY! He was nice and fluffy after his bath yesterday afternoon, something we do to prepare to visit the parents. They love Bode, but my dad is not fond of doggie odor.

So, in addition to the things everyone lists, I am thankful that this morning the dog smells sweet as we prepare to go to visit mother and father.

Hearty pancakes

These pictures are from a week ago today. I decided against taking the camera when I went out with Bode this morning, then regretted it. The sky cleared and the yellow maples were brilliant. There was a mist, so gave a dreamy quality to the scene. It was 50°F too, quite mild for November.

There have been some culinary adventures. Last week I decided to roast some chestnuts from the farmer’s market. There is still debris in the toaster oven from it. Despite poking holes in each of them with the tip of a paring knife, there were several explosions.

I also got to thinking that muffins and pancakes are very similar, mainly differ in the amount of liquid. On Saturday I tried converting a favorite muffin recipe, then made them again, they are moist and chewy with lots of flavor — Bode approves too!

Oatmeal pancakes

1/2 cup rolled oats
1 cup cultured buttermilk
1 egg
2 tablespoons dark brown sugar
2 tablespoons butter, melted
1/2 cup stone ground rye flour
1 tablespoon flax seed meal
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder

Mix the oatmeal and buttermilk in a medium size bowl. If you are the kind of person who is organized in the evenings, do this the night before. Otherwise do it and let them soak at least 15 minutes.

Put your griddle or a heavy skillet on to heat (about 1/3 of the maximum setting on my electric range).

Mix the rye flour, flax seed meal, salt and leavening agents and set aside.

Beat the egg into the oatmeal buttermilk mixture, then beat in the brown sugar, then the melted butter.

Stir in the flour mixture, then bake on the pre-heated griddle. Use a 2 oz ladle to make 3 to 4 inch cakes that are easy to turn.

Hints/tips:

Have a bit extra buttermilk available, how thick the batter gets is dependent on the humidity, how long you soak the oatmeal, and a number of other factors. Bake a small test pancake (a tablespoon of batter), then thin the batter as needed.

If the brown sugar is lumpy, smash it with a fork before adding it to the liquid ingredients. Small lumps are kind of nice though for a crunch and burst of flavor.

As with almost any pancake or waffle batter recipe, you can separate the egg and fold in the whipped egg white at the end.

This would probably serve two or three people. I usually bake the entire recipe of pancakes, then cool the extras on a wire rack. They are good for munching later with a cup of tea, fruit, and cheese.

Saving energy

Instead of lighting another burner or using a microwave oven to melt the butter, use the warming griddle or skillet. I put the butter into the metal measuring cup after measuring the oats and flour.

Bake the entire batch of pancakes at the same time instead of putting the leftover batter into the refrigerator and warming up the griddle again later.

Autumn color, frost

We had our first heavy frost this morning after about a week of light frosts.

It has been a while since I posted, mostly because I have been making time to go out and view the autumn foliage and walk Bode in preference to working on the computer.

This morning I accidentally deleted the previous post from October 11 while trying to delete a claim post for Technorati that didn’t work. It recognized that I had a WordPress blog, but would go no further. I am wondering if the problem is because I have this blog installed on a subdirectory of my main site rather than as a subdomain? Anyway, when using WordPress, be sure to reload the page after deleting a post.

still under the weather

Bode got up before 7, but waited until it was light enough to go out. It was 65°F and foggy.

We stayed out quite a while, with several rest stops for me on benches. I am still not feeling well, but the fresh air seemed to soothe my lungs. The reward was seeing the spires of Christ, Prince of Peace church through the mist as the sun broke through.

The cold and sore throat from last week turned into bronchitis with stomach and guts not doing so well either. I must have been pretty pathetic on Saturday evening because Bode came right into the bathroom after I finished grooming him for his bath. He likes to tease, but comes through as a real sweetheart when it is appropriate.

I was hoping things would get better soon, but on Sunday I came down with a migraine. I am still coughing today but not in so much pain. I have been sipping black tea with honey and lemon while deciding what all to try to tackle today. This will be the most consecutive Arthritis pool exercise classes I have missed since starting at the end of May. Will pass on the farmer’s market today — still have produce I got a week ago today. I am out of milk and eggs, so will probably go out soon. Bode is due for another bath with medicated shampoo today, so that will have priority. It is actually less effort than traipsing through a supermarket.

I was trying to get worked up to spin out a major rant about getting hit so much harder than other people when I catch a cold and how thoughtless it is for people to martyrize themselves by going to work (and not really get much done, just line up the prescription bottles by the computer keyboard) and spreading their viruses instead of taking a sick day. The connection seems to be rather sluggish this morning and I am running out of steam, so consider yourself spared.
